        I SMELL ROTTEN FISH 


WHOLE fish and SLICED fish, it shows that many consumers are having cases of food poisoning
after consuming. Why is that? It is because the long time needed to transport the fish from sea to consumer encourages the development of bacteria catalyzed by enzymes naturally occurring in fish. Now, this phenomenon makes it hard for us to decontaminate fishbecause the bacteria is airborne, on surfaces, and even on/in the fish from the sea. Human contact further increases the instances of food poisoning

We are focusing on the transport process, where human handling is most prevalent. We focused on whole and sliced fish because they are the most relevant to our solution.






**INTRODUCTION TO OUR RESEARCH**

Bacteria such as salmonella, e coli and streptococcus
aureus are one of the most serious vectors of food poisoning, and
can be lethal, with s. aureus being the most prevalent bacteria on
the human body, we decided to venture on a way to prevent this.
Today, we will zoom in on a particular type of food eaten
worldwide, FISH.
Contamination in fish, fresh or frozen, causes hundreds of
thousands of food poisoning cases, globally every year. Just
imagine how many of us could be saved from hours of pain if we
just stopped getting poisoned by fish.

**WHAT'S THE BIG IDEA ?**

We did our research and came up with an anti microbial liquid, a
simple yet effective method to ensure that consumers like you and me are assured of a food poisoning free meal.

This liquid, which can be used as a soaking agent, or spray , is in liquid form as it can penetrate easily into nooks and crannies that would be otherwise difficult to eradiate of microbes. The spray kills any bacteria on the fish. 


Now, what is in this mind-boggling formula? Is it safe to use?
What happens if we ingest it?


To add, we are coupling this technology with an existing one, vacuum packing, to ensure decontaminated fish stays decontaminated till the next stage of processing. This method will be used to preserve whole fish and fish slices, not fish which will be further processed(canned, shredded, etc.).

**WHAT IS VACUUM PACKING METHOD?**

Vacuum packing or vacuum packaging is a method of packaging that removes air from the package prior to sealing. It can involve both rigid and flexible types of packaging. The intent is usually to remove oxygen from the container to extend the shelf life of foods and, with flexible package forms, to reduce the volume of the contents and package

 Vacuum packing reduces atmospheric oxygen, limiting the growth of aerobic bacteria or fungi, and preventing the evaporation of volatile components.

 On a more short term basis, vacuum packing can also be used to store fresh foods, such as vegetables, meats, and liquids, because they inhibit bacterial growth.

**WHAT DOES THE ELECTROLYSED WATER DO?**

In an extract from studies on lettuce by researchers over the years, electrolyzed water was shown to have decontaminative effects on the surfaces of lettuce by significantly reducing the aerobic bacteria, coliform bacteria, molds, and yeasts. It has also been tested and shown that the water has no impact on the sensory quality of lettuce,which included taste, smell, and texture (Koseki and others 2001). Also, it has been shown to effectively inactivate Escherichia coli O157:H7, Salmonella enteritidis and Listeria monocytogenes (Park and others 2001).

In conclusion, we think this can be used to…
Effectively decontaminate fish from these major pathogens, safely, and without changing the original qualities of the fish.


**NO MORE DOUBTS PEOPLE!**

1) Why is it safe for humans to use?

Its safe because the active ingredient in electrolyzed water, oxychlorine compounds occur naturally in the human body as they are released by neutrophils, which are the most abundant type of white blood cells in humans and form an essential part of the immune system.

2) Is it economical? Will I have to pay through my nose?

No, you will not. Basically, nothing extra comes out of your
pocket unnecessarily because the cost of medication needed
to cure food poisoning from fish would be eradiated.Hence,
your meal is certainly a lot cheaper.You’ll also breathe a lot
easier when you know that what you’re eating is safe.

3) How is electrolyzed water produced?

Electrolyzed water (EOW or EO, also known as electrolyzed oxidizing water, electro-activated water or electrochemically activated water solution) is produced by the electrolysis of ordinary tap water containing dissolved sodium chloride.


4) How will this water be available to be used? Won’t it be difficult to obtain?

Electrolysis units sold for industrial and institutional disinfectant use and for municipal water-treatment are known as bleach generators. These avoid the need to ship and store chlorine gas, as well as the weight penalty of shipping prepared bleach solutions. Fishermen can purchase these units or just tanks/barrels/gallons of readily manufactured EOW, especially those on long haul trips

**AN ALL AROUND SOLUTION**

Not only can this be used for fish and other types of food, but electrolyzed water can be promoted commercially in many forms.

In the future, it could be used as a decontaminating agent
for food processing surfaces, not to mention uses in factories,
hospitals, public areas and even homes!

It is environmentally friendly, as it is harmless to humans,
animals and plants, only deactivating bacteria in its vicinity.

The decontamination process is also aided by vacuum
packaging, which will limit all forms of human contact until
the packaging is opened. Perhaps, this method can be used
to ensure the safety of foods such as meats, fruits and
vegetables as well!
